Creamy Squash Soup Recipe
A simple and tasty squash soup. We divided it into 4 servings and froze for easy lunch time or anytime meals.

Ingredients
  • 1 small squash (butternut, acorn, delicata,...)
  • 2 cups vegetable or chicken broth
  • 1 tsp honey
  • 1 slice fresh ginger, chopped (1/2 teaspoon)... Read More
  • salt and pepper
  • 1/2 cup Whole grain drink or favorite milk alternative (you can use milk, half n half or cream too)

Directions
  1. Slice squash and remove the seeds.
  2. Method 1: Brush squash with butter. Roast in 400*F oven for 30 minutes.
  3. Method 2: microwave.
  4. Method 3: Whatever method you like for making squash (or use leftover from a meal)
  5. Remove skin from squash.
  6. Put all ingredients in a saucepan and simmer for about 10 minutes.
  7. Put all in a blender and puree until smooth (Be very careful on this step, it is hot. You could use a stick blender.)
  8. Pour in milk and mix until well blended.
  9. Serve warm.
