How to make it

  • Salt and pepper your chicken breasts each side
  • Chop your onion into bite sized pieces, set aside
  • Mince your garlic clove, set aside
  • Heat up a Tablespoon of olive oil in your saute pan; lay chicken in when the oil shimmers.
  • Brown Chicken 3-5 minutes on each side, remove from pan onto a plate, tent with foil ( chicken should not be completely done).
  • Add a Tablespoon of olive oil to hot pan-- if needed.
  • Add chopped onion to shimmering oil; saute until softened 1-2 minutes.
  • Add minced garlic to pan, saute 30 second to 1 minute.
  • Deglaze pan with white wine or chicken broth.
  • Add tomatoes, kalamata olives ( drained) and simmer 2-3 minutes.
  • Add spices, salt and pepper and honey to taste.
  • Replace chicken in pan, place lid on pan and simmer until chicken is cooked through ( maybe 10 minutes minimum)
  • Serve with feta cheese.
  • Goes well with rice pilaf or just a side salad - especially if you are avoiding carbs.
