Easy Turkish Inspired Chicken Dinner

- 3 quart saute pan with lid shopping list
- 2-4 chicken breasts, thawed shopping list
- olive oil shopping list
- salt/pepper shopping list
- 1 medium yellow onion shopping list
- 1 clove garlic minced shopping list
- 1/4 cup white wine or chicken broth shopping list
- A 12 oz can of diced tomato AND/OR 1 medium to large tomato shopping list
- 1 to 2 cups kalamata olives drained pitted, sliced optional shopping list
- 1-2 Tablespoons nutmeg shopping list
- 1-2 Tablespoons honey OR 1 heaping Tablespoon brown sugar shopping list
- 1-2 teaspoons ground fenugreek shopping list
- 1-2 teaspoons oregano shopping list
- feta cheese shopping list
How to make it
- Salt and pepper your chicken breasts each side
- Chop your onion into bite sized pieces, set aside
- Mince your garlic clove, set aside
- Heat up a Tablespoon of olive oil in your saute pan; lay chicken in when the oil shimmers.
- Brown Chicken 3-5 minutes on each side, remove from pan onto a plate, tent with foil ( chicken should not be completely done).
- Add a Tablespoon of olive oil to hot pan-- if needed.
- Add chopped onion to shimmering oil; saute until softened 1-2 minutes.
- Add minced garlic to pan, saute 30 second to 1 minute.
- Deglaze pan with white wine or chicken broth.
- Add tomatoes, kalamata olives ( drained) and simmer 2-3 minutes.
- Add spices, salt and pepper and honey to taste.
- Replace chicken in pan, place lid on pan and simmer until chicken is cooked through ( maybe 10 minutes minimum)
- Serve with feta cheese.
- Goes well with rice pilaf or just a side salad - especially if you are avoiding carbs.
