Hubbys Whitebait Fritters

Whitebait are the babies of up to six varieties of New Zealand native fish. According to the Department of Conservation (DOC) the three most common species caught are galaxiids: inanga, kōaro I’m a South Island Girl and down on the west coast of New Zealand are the best whitebait, They are most commonly Inanga varieties, Native trout, and they are very delicate translucent bait. Ingredients
- Whitebait, this was just under 2lb shopping list
- 3 eggs, shopping list
- 1 desert spoon of corn flour shopping list
- salt and pepper shopping list
- lemons shopping list
How to make it
- Separate the eggs,
- Beat the whites till stiff
- Fold in the yolk’s, corn flour and salt n pepper
- Fold in the whitebait,
- Spoon onto a hot buttered fry pan and lightly brown on both sides
- Enjoy with a little lemon juice squeezed over them,,, YUMMMMYYYY!!!!!
