How to make it

  • Preheat oven to 425°. Combine all ingredients in a large bowl; toss to mix and coat veggies well.
  • Spray large cookie sheet or 9x13 pan with nonstick spray; pour veggie mixture out evenly on pan.
  • Bake, stirring every 10 minutes, 40 minutes or until potatoes are tender and other veggies are somewhat carmelized.

    @ trinii, you can use any combination of the following, sliced, subbed for the carrots/pepper: zucchini, yellow squash, red, green or yellow bell peppers, celery, onion and mushrooms.

    Thanks for posting this spin on Veggies. I recently came to "know" veggies through a weight loss program, but stir fry veggies can get boring after a while.
