Onion Roasted Veggies With Lemon And Parsley

- 1 envelope onion soup mix shopping list
- 1 lb all-purpose potatoes, unpeeled, cut into large chunks shopping list
- 1 lb baby carrots shopping list
- 1 large red bell pepper, cut into chunks shopping list
- scant 1/3 cup extra-virgin olive oil shopping list
- juice of half a lemon shopping list
- 2 tablespoons chopped fresh parsley shopping list
- generous grinding of black pepper shopping list
- sprinkling of salt (I used smoked sea salt) shopping list
How to make it
- Preheat oven to 425°. Combine all ingredients in a large bowl; toss to mix and coat veggies well.
- Spray large cookie sheet or 9x13 pan with nonstick spray; pour veggie mixture out evenly on pan.
- Bake, stirring every 10 minutes, 40 minutes or until potatoes are tender and other veggies are somewhat carmelized.
