How to make it

  • Cut the squid in inch long strips, quarter of an inch wide. Dice the potatoes. Finely chop the onions
  • Add the onions to the oil that has been heated up in a big pot. Add the squid when most of the water has evaporated from the onions and add a dash of grappa. Let the squid cook for 5 minutes. Add the tomatoes, water and the spices. Cook for 2,5 - 4 hours - slowly. 20 minutes before the end add the potatoes. When the potatoes are ready mash them and add them to the soup as to thicken it. It is a house favorite - often I am asked to make more than needed as this soup gets better on ageing.
