Dill Potato Salad

- 2 lb. bag of baby red potatoes shopping list
- 1/3 cup fresh chopped dill shopping list
- 1 tsp Dijon mustard shopping list
- 8 peices of crisp bacon shopping list
- 1/2 cup mayo shopping list
- salt & pepper shopping list
- EVOO shopping list
How to make it
- Preheat oven to 450.
- Clean and dice potatoes, leaving the skin.
- Place on cookie sheet and lightly coat with EVOO, then salt and pepper. Make sure all potatoes are coated.
- Roast in oven for 20 minutes. Remove and allow to cool.
- Chop fresh dill, removing stems.
- Brown and crisp bacon in microwave. Let cool. Crumble.
- In a bowl or dish, combine all ingredients and mix together.
- Best served at room temp...enjoy!
