People tend to fall in love with this "not your mom's" potato salad. Bacon, dill, roasted potatoes...how could you not? Great for bbq or whenever!

Ingredients
  • 2 lb. bag of baby red potatoes
  • 1/3 cup fresh chopped dill
  • 1 tsp dijon mustard
  • 8 peices of crisp bacon
  • 1/2 cup mayo
  • salt & pepper
  • EVOO

Directions
  1. Preheat oven to 450.
  2. Clean and dice potatoes, leaving the skin.
  3. Place on cookie sheet and lightly coat with EVOO, then salt and pepper. Make sure all potatoes are coated.
  4. Roast in oven for 20 minutes. Remove and allow to cool.
  5. Chop fresh dill, removing stems.
  6. Brown and crisp bacon in microwave. Let cool. Crumble.
  7. In a bowl or dish, combine all ingredients and mix together.
  8. Best served at room temp...enjoy!
