Spiced Chocolate Cupcakes With Orange Ganache Recipe

  • 2 cups flour
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground clove
  • 1 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla
  • 1 tablespoon orange zest
  • 1 cup hot water
  • 2 eggs
  • 1 cup plain yogurt
  • 10 ounces semi-sweet chocolate
  • 1 cup heavy cream
  • 1 cup orange marmalade

Directions
  1. Spiced Chocolate Cupcakes:
  2. Preheat oven to 350 degrees. Line or lightly grease 24 muffin cups.
  3. In a medium bowl, sift together flour, cocoa powder, baking powder, baking soda, cinnamon, ground clove and salt. Set aside.
  4. In a large bowl, combine the sugars, applesauce, vanilla, orange zest and water. Beat in the eggs. Stir in the flour mixture in two batches, alternating with the yogurt and beginning and ending with the flour mixture.
  5. Spoon the batter into prepared muffin cups. Bake for 15-20 minutes. Remove from oven and let cool on a wire rack.
  6. Orange Ganache:
  7. Using a food processor, pulse chocolate into small bits. Set aside.
  8. In a small saucepan, bring heavy cream to a boil over medium heat. Pour over chocolate and add orange marmalade. Mix until smooth. If ganache is too thick, thin with a little cream or milk.
  9. Frost cupcakes and top with orange sprinkles or orange-colored sugar crystals.
