Roasted Leg Of Lamb Recipe
Awesome alternative to Sunday night roast beef, great with lemon potatoes and a salad.

Ingredients
  • Leg of Lamb
  • 5-7 whole cloves of garlic
  • 6 sprigs of fresh rosemary
  • 2tsp salt
  • 1tsp pepper
  • 2tsp pureed garlic

Directions
  1. Preheat the oven to 400 F with rack on the lowest level
  2. Rinse lamb in cold water and pat dry with paper towel
  3. Slice garlic cloves in half
  4. Make small slits in the lamb and insert the garlic cloves. Rub the leg with the pureed garlic. Sprinkle with the fresh rosemary, salt and pepper.
  5. Roast at 400F for 30 minutes and then reduce the heat to 350F for an additional 90 minutes. This is a nice medium well roast (depending on the size of the leg)
  6. Rest the meat for 10-15 minutes and carve.
