How to make it

  • In a hot pan, put vegetable oil
  • Then put margarine
  • saute ginger and garlic paste
  • then the chopped shallots and bell peppers
  • saute very well; that's what Filipino dishes are known for
  • Add chopped red chilis
  • Add chicken, saute very well for 15 minutes
  • Every 3 minutes, put a dash of curry powder in the pan as you saute the chicken
  • Then put ground pepper to taste
  • Throw in the potatoes and carrots
  • Pour in the coconut milk and the tomato paste and leave it until the mixture reduces and turns into a yellowish-brown one
  • Season the dish with fish sauce
  • Boil for five more minutes or until the potatoes and carrots are done
