Base Ancho Sauce

- 2 dried ancho chillies shopping list
- 2 dried passilla chillies shopping list
- 2 TBS diced carrot shopping list
- 2 TBS diced onion shopping list
- 2 cloves of chopped garlic shopping list
- 1 red jalapeno seeded and chopped shopping list
- 2 TBS rice wine vinegar shopping list
- 2 TBS olive oil shopping list
- 2 cups of water shopping list
How to make it
- Clean seeds and stems from dried chillies and soak in 2 cups of water in a glass bowl.
- In a small sauce pan bring 1 cup of water to a boil and add carrots and boil for 10 minutes then drain.
- Add 2 TBS olive oil to a fry pan and on medium to low heat, saute onion,jalapeno for 5 minutes, add the garlic and saute for another 3-5 minutes.
- Add the remaining ingredients along with the ancho, passilla and the 2 cups of soaking liquid.
- Bring to a boil and remove from heat and allow to cool for 30 minutes.
- Puree and store in a plastic container and refridgerate.
