Base Ancho Sauce Recipe
This is a sauce for flavoring many of my dishes that I created

Ingredients
  • 2 dried ancho chillies
  • 2 dried passilla chillies
  • 2 TBS diced carrot
  • 2 TBS diced onion
  • 2 cloves of chopped garlic
  • 1 red jalapeno seeded and chopped
  • 2 TBS rice wine vinegar
  • 2 TBS olive oil
  • 2 cups of water

Directions
  1. Clean seeds and stems from dried chillies and soak in 2 cups of water in a glass bowl.
  2. In a small sauce pan bring 1 cup of water to a boil and add carrots and boil for 10 minutes then drain.
  3. Add 2 TBS olive oil to a fry pan and on medium to low heat, saute onion,jalapeno for 5 minutes, add the garlic and saute for another 3-5 minutes.
  4. Add the remaining ingredients along with the ancho, passilla and the 2 cups of soaking liquid.
  5. Bring to a boil and remove from heat and allow to cool for 30 minutes.
  6. Puree and store in a plastic container and refridgerate.
