Jalapeno Rice Recipe
Classic Connecticut Cuisine by the Connecticut Easter Seals. Add salt and other seasoning to the sour cream mixture to give this dish more flavor. A good substitute for mashed potatoes.

Ingredients
  • 1 cup chopped jalapeno peppers
  • 2 cups sour cream
  • 3 cups cooked rice
  • 12 oz Monterey Jack cheese, shredded
  • Shredded Cheddar cheese

Directions
  1. Combine jalapeno peppers and sour cream in a bowl; mix well.
  2. Layer cooked rice, sour cream mixture and Monterey Hack cheese 1/3 at a time in a 9x13-inch baking dish. Sprinkle with Cheddar cheese.
  3. Bake at 350 degrees until cheese melts.
