Ingredients
  • 6 oz diced salt beef
  • 12 oz salt fish
  • 1 1/2 pints coconut milk
  • 1 small diced onion
  • 2 spring onions
  • 2 garlic cloves
  • coconut oil for frying
  • 12 oz green bananas, peeled and chopped
  • crushed black pepper to taste
  • 2 tbs parsely
  • 3 seasoning peppers (your choice)
  • 3 sprigs thyme
  • 6 medium okra
  • 2 medium potatoes, peeled and cut into 3/4-inch cubes
  • 1 ripe plantain, peeled and cut into 3/4-inch cubes
  • 1 lb pumpkin, peeled and cut into 3/4-inch cubes
  • 3 large tomatoes, peeled and cut into 3/4-inch cubes

Directions
  1. Soak salt beef and saltfish over night; pour boiling water over them, enough to cover. Next day drain them. Remove bone from saltfish and flake.
  2. Fry diced onions, garlic, beef in coconut oil. Once they are cooked through add the saltfish, the peeled and chopped green banana and seasoning. Stir well.
  3. First add the potatoes to the pot, then add the plantain, okra and ending with the pumpkin. Each vegetable has different cook times. Potatoes take the longest so add them first, after they cook for awhile, then add the remaining vegetables in the order listed above every 5 minutes.
  4. Pour in the coconut milk, using more if you need to, cover with a lid and cook for twenty additional minutes over moderate heat. Test the vegetables, adjust seasoning. Serve. You want the vegetables to be just cooked and not turn into a mush.
