Potato Corn Patties

- 4-6 cups potatoes, mashed (use leftover mashed potatoes) shopping list
- 1 cup diced yellow onions shopping list
- 1 jalapeno, finely chopped shopping list
- 3 ears of corn, cooked shopping list
- 3 eggs shopping list
- 3 cups vegetable oil shopping list
- 1 tsp pepper shopping list
- 1 tsp salt shopping list
- 2 cups flour shopping list
How to make it
- Cut corn from cobs. Mix potatoes, corn, onion, jalapeno, eggs, salt, and pepper in bowl.
- Place flour in dredging pan. Using a large serving sppon, dip a full spoonful of potatoe-corn mixture and carefuly place in flour.
- Flatten to 1/2-inch thickness.
- Turn and flour other side. In a skillet, heat 3/4-1-inch of oil on medium-high heat. Fry patties in oil 2-3 minutes.Turn and cook 2 minutes other side.
- Drain on paper towels. Serve.
