Ingredients
  • 4 pieces of Salmon
  • 4 Garlic Cloves (skin left on)
  • Juice of 2 Lemons
  • Cracked Black Pepper
  • 1 Tbsp Dijon Mustard
  • 4 Tbsp Extra Virgin Olive Oil
  • 1 small punnet of Cherry Tomatoes (each sliced in half)
  • 1 handful of Baby Spinach Leaves
  • 1 handful fresh Basil Leaves
  • 300g dried Penne Pasta
  • Parmesan Cheese to serve

Directions
  1. 1) Heat oven to 200 degrees C
  2. 2) Place Salmon fillets onto the centre of a large piece of tin foil. Lift the sides of the foil up to form a boat. Pour the lemon juice over the fish and place the garlic cloves in between the fillets. Wrap the foil up so that the package is sealed.
  3. 3) Place in the oven and cook for 20mins.
  4. 4) While the Salmon is cooking start cooking the pasta. Drain when cooked and place back into the pot you cooked it in. Cover & set aside (keep warm).
  5. 5) Once the fish has cooked, remove Salmon fillets & set aside to keep warm. Squeeze the flesh out of the Garlic Cloves into a cup. Pour the juices from the fish parcel into the cup also. Add the mustard, pepper and Olive Oil to the juices and stir into a dressing.
  6. 6) Break the Salmon fillets into pieces into the pasta. Add tomatoes, spinach, basil, dressing and stir.
  7. 7) Serve with grated parmesan.
