How to make it

  • 1) Heat oven to 200 degrees C
  • 2) Place Salmon fillets onto the centre of a large piece of tin foil. Lift the sides of the foil up to form a boat. Pour the lemon juice over the fish and place the garlic cloves in between the fillets. Wrap the foil up so that the package is sealed.
  • 3) Place in the oven and cook for 20mins.
  • 4) While the Salmon is cooking start cooking the pasta. Drain when cooked and place back into the pot you cooked it in. Cover & set aside (keep warm).
  • 5) Once the fish has cooked, remove Salmon fillets & set aside to keep warm. Squeeze the flesh out of the Garlic Cloves into a cup. Pour the juices from the fish parcel into the cup also. Add the mustard, pepper and Olive Oil to the juices and stir into a dressing.
  • 6) Break the Salmon fillets into pieces into the pasta. Add tomatoes, spinach, basil, dressing and stir.
  • 7) Serve with grated parmesan.
