Cheesy Spinach Meatloaf Recipe
A filled meatloaf that is a sure bet, easy to prepare and a pleasure to serve with mashed potatoes and hot rolls.

Ingredients
  • Spinach Mushroom Filling:
  • 1 pkg frozen spinach, thawed
  • 1/4 cup butter
  • 1 cup sliced mushrooms
  • 1/2 cup onion, chopped
  • 1/4 cup green onion, chopped
  • 1/2 cup fine dry breadcrumbs
  • 1 egg
  • Pinch each fresh ground pepper and nutmeg
  • Meat Mixture:
  • 1 lb medium ground beef
  • 1/2 lb lean ground pork
  • 1 cup grated Farmers cheese (or Cheddar, Monterey, Mozzarella)
  • 1/2 cup fine dry breadcrumbs
  • 1 egg, beaten
  • 2 tsp Worcestershire sauce
  • 1/4 tsp pepper
  • Pinch hot mustard powder

Directions
  1. Filling: Drain spinach and squeeze out excess moisture. Chop coarsely and set aside.
  2. In skillet, melt butter; add mushrooms and onion and cook over medium heat until onion is translucent. Transfer to a bowl. Add spinach, green onion, breadcrumbs, egg, pepper and nutmeg; mix well and reserve.
  3. Meat Mixture: In a bowl, combine beef, pork, cheese, breadcrumbs, egg, Worcestershire, pepper and mustard. Place meat mixture between two sheets of wax paper and roll into a rectangle approximately 18"x8". Remove top sheet.
  4. Preheat oven to 350F.
  5. Spread spinach mixture evenly over meat leaving 1/2" border around edges. Roll up meat from short end in jelly roll style, lifting paper to help.
  6. Place loaf in an 8 1/2" x 4 1/2" loaf pan. Bake for approximately 1 hour until browned. Transfer to serving platter. Garnish with more sauteed mushrooms, if desired.
