Simple Healthy Stir Fry

- 1/2 red bell pepper, cut into bite-sized pieces shopping list
- 1/2 green bell pepper, cut into bite-sized pieces shopping list
- 1/2 yellow onion, cut into bite sized pieces shopping list
- 1/2 cup broccoli florets shopping list
- 2 celery ribs, cut into bite-sized pieces shopping list
- 2 cloves garlic, minced shopping list
- 1/2 cup sliced fresh mushrooms shopping list
- 1 tsp fresh grated ginger shopping list
- (Pinch of red pepper flakes, optional) shopping list
- 1/4 cup teriyaki or soy sauce shopping list
- 1/4 cup chicken broth shopping list
- 1 Tbs hoisin sauce shopping list
- 1 tsp honey shopping list
- 1/2 cup cooked, diced chicken breast (you can use leftover rotisserie or grilled chicken, or boil chicken breasts in chicken broth and cut up) shopping list
- 1/4 cup (a handful) bean sprouts shopping list
How to make it
- Over medium heat, saute bell peppers, onion, broccoli, celery in olive or vegetable oil for approx 2 minutes, stirring occasionally.
- Add garlic and ginger and saute one minute. (If you like it spicy, add a pinch of red pepper flakes)
- Add mushrooms and saute 30 seconds.
- Lower heat to medium-low and add soy or teriyaki sauce, chicken broth, hoisin sauce and honey and blend well, and let the mixture cook for about 3-5 minutes.
- Mix chicken in with veggies until well coated.
- Top with bean sprouts and gently combine.
- Serve immediately over jasmine, white or brown rice.
