Simple Healthy Stir Fry Recipe
This is a quick, simple, healthy meal. The measurements are approximate and you can use any veggies that you have on hand! Great to use up foods in your fridge!

Ingredients
  • 1/2 red bell pepper, cut into bite-sized pieces
  • 1/2 green bell pepper, cut into bite-sized pieces
  • 1/2 yellow onion, cut into bite sized pieces
  • 1/2 cup broccoli florets
  • 2 celery ribs, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1/2 cup sliced fresh mushrooms
  • 1 tsp fresh grated ginger
  • (Pinch of red pepper flakes, optional)
  • 1/4 cup teriyaki or soy sauce
  • 1/4 cup chicken broth
  • 1 Tbs hoisin sauce
  • 1 tsp honey
  • 1/2 cup cooked, diced chicken breast (you can use leftover rotisserie or grilled chicken, or boil chicken breasts in chicken broth and cut up)
  • 1/4 cup (a handful) bean sprouts

Directions
  1. Over medium heat, saute bell peppers, onion, broccoli, celery in olive or vegetable oil for approx 2 minutes, stirring occasionally.
  2. Add garlic and ginger and saute one minute. (If you like it spicy, add a pinch of red pepper flakes)
  3. Add mushrooms and saute 30 seconds.
  4. Lower heat to medium-low and add soy or teriyaki sauce, chicken broth, hoisin sauce and honey and blend well, and let the mixture cook for about 3-5 minutes.
  5. Mix chicken in with veggies until well coated.
  6. Top with bean sprouts and gently combine.
  7. Serve immediately over jasmine, white or brown rice.
