I'd only had Filet Mignon once before and wasn't sure how this would turn out on the grill, but the semi-dry rub I used and the bacon I wrapped it in made it super tender and juicy!!

Ingredients
  • 2 11/2-2 inch thick Filet Mignons
  • Tbsp smokehouse flavored pepper or 1cap full of liquid smoke
  • 1/8 cup extra virgin olive oil
  • 4-5 finely minced galic cloves
  • half of a finely minced shallot
  • zest of one lemon finely miced
  • pinch of salt
  • bacon-enough to cover the entire steaks
  • toothpicks

Directions
  1. Mix all of the ingredients together to form a paste
  2. rub this paste over entire steak including sides
  3. wrap the steaks in bacon and secure with toothpicks
  4. Grill 5-8 minutes per side until bacon looks like its crisping up
  5. Pull off grill and let sit a couple minutes.
  6. Dig in
