Pumpkin Cheesecake Recipe
This is a smooth creamy pumpkin cheese cake that is easy to make but taste like you spent hours making it.

Ingredients
  • Crust
  • 3/4 cup graham wafer crumbs
  • 1/2 cup finely chopped pecans or shredded coconut
  • 1/4 cup brown sugar
  • 3 tbsp melted butter
  • Filling
  • 3 pkgs cream cheese
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 3 eggs
  • 1 1/2 cup canned pumpkin
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 2 tbsp milk
  • 1 tbsp cornstarch

Directions
  1. Crust: Combine crust ingredients. Press firmly into a 9 inch spring form pan
  2. Filling: In a large bowl, beat cream cheese until smooth.
  3. While blending slowly add sugars.
  4. Beat in eggs one at a time until blended.
  5. Beat in pumpkin spices milk, and cornstarch until thoroughly combined.
  6. Bake at 350 for 1 hr or until center is set.
  7. Removie from oven and run knife around sides on pan
  8. Cool at room temperature.
  9. Chill covered overnight.
