Gingerbread

- 4oz. (100g or 1 stick) butter or margarine shopping list
- 4 oz. (100g or 1/2 cup) soft brown sugar shopping list
- 1-1/2 tablespoons treacle, also called molasses shopping list
- 6oz. (150g or 1-1/2 cups) all-purpose flour shopping list
- 2oz. (50g or 1/2 cup) oatmeal shopping list
- 1oz. (25g or 1/4 cup) bran shopping list
- 3 teaspoons ground ginger shopping list
- 1 teaspoon allspice shopping list
- 1 teaspoon bicarbonate of soda or baking soda shopping list
- 2 eggs shopping list
- 2 fluid oz. (50ml or 1/4 cup) whole milk shopping list
- 4 fluid oz. (100ml or 1/2 cup) orange juice - NO pulp shopping list
- *I like to reduce the milk and add a SPLASH of whiskey :-O shopping list
How to make it
- Preheat the oven to 160C/320F/Gas Mark 3 (reduce the temperature by 10C or equivalent if you have a fan assisted oven).
- Mix the flour, bran, spices and soda together in a bowl.
- Pour milk and orange juice in a large measuring cup and lightly beat in the eggs.
- Put the margarine, sugar and treacle/molasses in a saucepan on a low heat and stir until the sugar has dissolved. Remove from the heat and stir into the dry ingredients followed with the addition of the eggs/milk/juice mixture.
- Pour the mixture into a 2lb loaf tin lined with baking parchment and bake for approximately 40 minutes.
- If you want to make iced gingerbread squares, put the mixture in a 9" (23cm) square, lined tin and bake for 35 minutes. When it has cooled, use 8oz. (250g or 1-1/2 cups) confectioners' sugar and enough water to make a thick yet spreadable icing.

Love the addition of Whiskey. Preferably 22 year single malt. Sounds like something that my family would dream up. It is plain to see that I am of Scottish descent. Love cooking with alcohol. You have our Five Forks on this one!
