Pot Roast With Pizzaz

- 3 lb roast (any cut is fine - including cheapest) shopping list
- 1 12 oz can of light colored beer (Bud, Miller Lite, etc.) shopping list
- 1 Tbs minced garlic shopping list
- 2 Tsp Crushed red peppers (depending on taste) shopping list
- 1/3 to 1/2 cup Dales marinade (depending on taste) shopping list
- 1 medium to large onion quartered shopping list
- 1 small bag of baby carrots shopping list
- 3 large potatoes shopping list
- salt and Pepper to taste shopping list
- water shopping list
How to make it
- In a 4 quart pressure cooker, place roast that has been sprinkled with Pepper on all sides.
- Add beer, minced garlic, crushed red peppers, marinade, and onion.
- Add water to cover the roast.
- Vegetables - Peel and cut potatos into chunks.
- Add potatoes and baby carrots to the roast approximately 2 1/2 hours into cooking time. Approximately 1 hour before serving.
- Cook 3 1/2 to 4 hours on low heat WITHOUT using the regulator to build pressure.
- Take a portion of the liquid the roast cooked in and thicken to make a wonderful and complimentary brown gravy for mashed potatos.
- Hint: The remaining liquid makes a terrific base for homemade vegetable beef soup or beef stew!
