Cheesy Bacon And Leek Mashed Potatoes

- 2 lbs red potatoes with skins on shopping list
- 1 cup leeks cleaned and sliced into half rounds shopping list
- 4 strips bacon cooked and crumbled shopping list
- 1/2 cup finely shredded chedder cheese shopping list
- 1 tbls butter shopping list
- salt and pepper to taste shopping list
How to make it
- Boil potatoes until fork tender
- saute leeks in butter
- drain and mash potatoes leaving them slightly lumpy
- mix potatoes, leeks and salt/pepper and put into a 2 quart cassarole
- top with cheese and bacon
- bake at 400F for 15 min or until cheese is bubblely and golden

The taste was great, my son really loved it! However it was a bit dry. I did add a little more butter, but it was still dry after baking. Next time I'll add some milk. You can't go wrong with leeks and bacon, delish!
