Ingredients

How to make it

  • Boil potatoes until fork tender
  • saute leeks in butter
  • drain and mash potatoes leaving them slightly lumpy
  • mix potatoes, leeks and salt/pepper and put into a 2 quart cassarole
  • top with cheese and bacon
  • bake at 400F for 15 min or until cheese is bubblely and golden

    Cosmicmother ate it and said...
    The taste was great, my son really loved it! However it was a bit dry. I did add a little more butter, but it was still dry after baking. Next time I'll add some milk. You can't go wrong with leeks and bacon, delish!
