How to make it

  • Put potatoes, stock and chopped leek (discarding the tough upper dark green portion) on medium heat and cook. until soft.
  • Add bag of instant potatoes and water as needed.
  • Add soup base, maybe 2-2T and bacon.
  • When you have the consistency you like, add the nutmeg, white pepper and salt to taste.
  • Add milk as much or as little as you like, soup will already be pretty thick.
  • Put into bowls and garnish with cheese and fresh chopped leeks.
  • NOTE:
  • Other spices I've added include:
  • a dash of garlic powder
  • 1/2 head roasted garlic - goes well with a sharp cheddar garnish
  • add swiss cheese with the milk and ham instead of bacon.
  • Its an easy recipe to modify, have fun with it!
