Quick as a wink Potato Soup

- bag of steam and mash red potatoes shopping list
- vegetable stock shopping list
- 1 leek chopped shopping list
- bag of instant dried baby red mashed potatoes shopping list
- chicken soup base shopping list
- 1 bag bacon pieces (in the salad section) shopping list
- shredded cheese of your choice shopping list
- milk, half and half or cream shopping list
- nutmeg shopping list
- white pepper shopping list
- kosher salt shopping list
How to make it
- Put potatoes, stock and chopped leek (discarding the tough upper dark green portion) on medium heat and cook. until soft.
- Add bag of instant potatoes and water as needed.
- Add soup base, maybe 2-2T and bacon.
- When you have the consistency you like, add the nutmeg, white pepper and salt to taste.
- Add milk as much or as little as you like, soup will already be pretty thick.
- Put into bowls and garnish with cheese and fresh chopped leeks.
- NOTE:
- Other spices I've added include:
- a dash of garlic powder
- 1/2 head roasted garlic - goes well with a sharp cheddar garnish
- add swiss cheese with the milk and ham instead of bacon.
- Its an easy recipe to modify, have fun with it!
