Collard Greens with Ham

- 1 ham hock (I sometimes just use chunks of ham. shopping list
- 1 small onion, peeled and chopped the size you like. shopping list
- 1 Tablespoon butter shopping list
- 1 garlic clove, minced shopping list
- 3 cups of water shopping list
- 3 bunches collard greens or 1 lb., clean,rinsed and cut into 1" pieces shopping list
- sea salt and fresh ground pepper to taste shopping list
How to make it
- 1. In a large deep pot, combine the ham, onion, butter, and minced garlic. Add the water, bring to a simmer over med heat for 30 min.
- 2. Gradually add the collard greens, let each bunch wilt down before adding the next. Reduce the heat to low and allow the greens to simmer, covered for 1-1 1/2 hours. Add sea salt and pepper to taste. Serve while hot
- This can be done in a crock-pot if you can set it at medium and low.
