Chunky Vegetable Fricasse

- 1 1/2 lb bag of frozen mixed vegetables shopping list
- 1/4 lb grated sharp cheddar cheese shopping list
- 1 cup sour cream shopping list
- 2 eggs, beaten shopping list
- pepper to taste shopping list
- 3/4 cup pretzels, crushed shopping list
- 2 tbsp chopped hazelnuts shopping list
How to make it
- Preheat oven to 425F.
- Add vegetables to a pot of boiling water, bring back to a boil and cook for 3 minutes.
- Drain.
- Reserve 2 tbsp cheese.
- Stir the remaining cheese into sour cream.
- Mix in eggs.
- Season to taste with pepper.
- Mix in the vegetables and transfer to a greased shallow ovenproof dish.
- Mix pretzels with reserved cheese and nuts.
- Scatter over veggie mixture.
- Bake on the top shelf of the oven for 12-15 minutes or until golden and slightly puffed.
