Lentils With Hot And Sweet Sausage

- 3 tbls. olive oil shopping list
- 1 lb. hot italian sausage, cut into 1 in diagonal slices shopping list
- 1 lb. sweet Italian sausage, cut into 1 in diagonal slices shopping list
- 1/4 c. Pantella (Italian bacon) chopped shopping list
- 1 c. onion chopped shopping list
- 1/2 c. celery chopped shopping list
- 2 tsp. garlic minced shopping list
- 1-1/2 c. green lentils shopping list
- 1 c. tomato sauce shopping list
- 1 bay leaf shopping list
- 1/8 tsp. crushed red pepper flakes shopping list
- 2 c. water shopping list
How to make it
- In Dutch oven *(or skillet if using slow cooker), heat olive oil over medium heat. Add sausage, Pancetta, onion, celery and garlic; saute 10 mins until vegetables are soft and sausages are lightly browned. Add the rest of the ingredients. Bring to a boil then reduce heat to a simmer, cover and cook 1 hr or until lentils are soft. Remove bay leaf. *(If using a slow cooker have it heating the rest of the ingredients while you are browning the sausage mixture then transfer the sausage mixture into it when it is done. Cook until lentils are soft.)
