How to make it

  • In Dutch oven *(or skillet if using slow cooker), heat olive oil over medium heat. Add sausage, Pancetta, onion, celery and garlic; saute 10 mins until vegetables are soft and sausages are lightly browned. Add the rest of the ingredients. Bring to a boil then reduce heat to a simmer, cover and cook 1 hr or until lentils are soft. Remove bay leaf. *(If using a slow cooker have it heating the rest of the ingredients while you are browning the sausage mixture then transfer the sausage mixture into it when it is done. Cook until lentils are soft.)
