Zesty Italian Vegetables

- 1 red bell pepper, seeded and cut into strips shopping list
- 1 yellow bell pepper, seeded and cut into strips shopping list
- 1 yellow onion, peeled and sliced shopping list
- 2 zucchini, sliced diagonally into 1/4 inch slices shopping list
- 2 yellow squash, sliced into 1/4 inch slices shopping list
- 1 Portabello mushroom, cut into 1/8 inch pieces shopping list
- 2 roma tomatos, cut into 1/2 inch pieces shopping list
- 3 Tablespoons olive oil shopping list
- 1 tsp kosher salt shopping list
- 1/2 tsp fresh ground pepper shopping list
- 1 Tablespoon Dried Italian herbs shopping list
- 1/4 tsp. red pepper flakes shopping list
- 3 Tablespoons Grated parmesan cheese shopping list
How to make it
- Heat oil until it shimmers. Add veges and cook until crisp tender. Toss with herbs, salt, pepper and hot pepper flakes. Sprinkle with parmesan cheese before serving.
