Sweet Potato Cupcakes wCream Cheese Frosting

- 17 oz of canned sweet potatoes or yams shopping list
- 2 cups of flour shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 1 tsp cinnamon shopping list
- 1 1/2 sticks of butter shopping list
- 1 1/2 cups of sugar ( I like cane sugar) shopping list
- 3 eggs shopping list
- 1/2 tsp vanilla shopping list
- * I buy already made cream cheese frosting but you can make your own if you want shopping list
How to make it
- Preheat oven to 350 degrees
- Mash the sweet potatoes and set aside
- In seperate bowl combined the butter and sugar and whip until creamy
- Add flour, baking powder, baking soda, cinnamon, salt and mix well
- Add sweet potatoes, eggs and vanilla and mix well.
- Put cupcake cups in tins (I used 2 tins with 6 cupcakes in each)
- fill cups 3/4 of the way
- Bake for 18-20 mins
- Let cool and then frost with the cream cheese frosting
