How to make it

  • Peel and boil the potatoes, (may use caned sweet potatoes) and put through a potato ricer
  • Cream the butter, salt, sugar
  • Add the egg yolks, lemon juice and rind, cinnamon, potato pulp, and milk
  • Fold in egg whites beaten stiff
  • Transfer to pie plate lined with the pastry
  • Place in hot oven, 400 degrees F. for 10 minutes; then reduce the heat to 375 degrees F.; and cook until pie is firm in the center ( firm is when you can put a tooth pick in the center of pie and it comes out clean)
