SWEET POTATO PIE

- 4 medium sized sweet potatoes (30 oz) caned sweet potatoes can be used shopping list
- 1/4 c. butter shopping list
- a few grains salt (sea salt) shopping list
- 1/2 c. sugar shopping list
- 3 eggs shopping list
- juice and grated rind of one lemon shopping list
- 1/4 t. cinnamon shopping list
- 1 can sweetened condensed milk (Borden EAGLE BRAND) shopping list
- single pie pastry shopping list
How to make it
- Peel and boil the potatoes, (may use caned sweet potatoes) and put through a potato ricer
- Cream the butter, salt, sugar
- Add the egg yolks, lemon juice and rind, cinnamon, potato pulp, and milk
- Fold in egg whites beaten stiff
- Transfer to pie plate lined with the pastry
- Place in hot oven, 400 degrees F. for 10 minutes; then reduce the heat to 375 degrees F.; and cook until pie is firm in the center ( firm is when you can put a tooth pick in the center of pie and it comes out clean)
