Garlic and Tomato Quiche

- 1 tablespoon unsalted butter shopping list
- 3 cloves garlic minced shopping list
- 2 large ripe tomatoes peeled and chopped shopping list
- 1 tablespoon tomato paste shopping list
- 1/4 teaspoon oregano shopping list
- 1/4 teaspoon sea salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 3 eggs shopping list
- 2/3 cup cream shopping list
- 9” pie shell shopping list
- 1 tomato sliced thin shopping list
- 4 ounces swiss cheese shopping list
- 2 tablespoon grated parmesan cheese shopping list
How to make it
- Preheat oven to 350 then sauté garlic gently so as not to add color.
- Add chopped tomatoes and tomato paste and cook until fairly thick.
- Add oregano, salt and pepper then cook 3 minutes.
- Beat eggs slightly and blend with the cream then add tomato mixture and blend well.
- Line pie shell with sliced tomato and top with the cheeses then carefully pour egg mixture over.
- Bake 40 minutes then let quiche sit 15 minutes before cutting.
