Chicken in Peanut Sauce

- 2 tablespoons olive oil shopping list
- 1 teaspoon parsley flakes shopping list
- 1 onion, cut into wedges shopping list
- 2 teaspoons curry powder shopping list
- 1 teaspoon crushed garlic shopping list
- 600g chicken breast, skin off and sliced/cut into strips shopping list
- 1/2 cup chicken stock shopping list
- 1/4 cup crunchy peanut butter shopping list
- 1/4 cup honey shopping list
- cooked rice to serve with shopping list
How to make it
- 1. Heat oil in a large frying pan over high heat and then saute the onion until tender. Add garlic and curry powder. Cook, stirring until fragrant. Add the chicken and cook, stirring until the chicken has browned.
- 2. Stir in the chicken stock, honey and peanut butter until combined and then bring to the boil over a high heat. Reduce heat to low and simmer until the sauce has thickened slightly and the chicken is cooked through. Stir through parsley flakes.
- 3. Serve chicken with steamed or cooked rice.
