Cardiac Burgers Recipe
This would be a good lunch if you're going to chop down trees all afternoon. For most of us this will have to be a rare treat.

Ingredients
  • 8 ounces bacon
  • 1 pound lean ground beef
  • 1 pound lean ground pork
  • 1/3 cup tomato paste
  • 2 tsp oil
  • 2 tablespoons pepper sauce
  • 1 tablespoon fish sauce
  • 1 egg
  • 5 cloves garlic -- minced
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded gouda cheese
  • crackers -- ground

Directions
  1. Cook the bacon till crispy. Dice finely and reserve fat
  2. Bronze the tomato paste over medium-high heat
  3. Stack the two packages of meat and cut through several times (or regrind coarsely).
  4. Combine the three meats and fat and mix well.
  5. Mix the garlic and all of the wet ingredients. Mix into meat mixture, add cheeses and combine well. Use cracker crumbs as required for a stable mixture.
  6. Form into 6 oz patties
  7. Notes:
  8. The pepper sauce I use is black pepper based (President's Choice - Memories of Lyons)
  9. These are best done a day ahead as they firm up nicely overnight.
  10. Grilling is my first choice but pan frying, baking or broiling ought to work too.

My heart started to slow down just reading this... OMG... it sounds good... but maybe only once a year... after check-up! I feel guilty eating a regular burger! Wow... bacon...and the fat... the good ole days!
