Ingredients
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup seedless raisins
  • 1/2 cup finely chopped carrot
  • 1/2 cup hot water
  • 1 cup peeled and coarsley chopped apples

Directions
  1. Pastry for a 2 crust pie~ see Olive Oil Crust
  2. or ready made pie crust
  3. In medium size saucepan measure first 6 ingredients. Stir well.
  4. Add raisins and carrot. Stir in water. Stir over medium heat until boiling. Simmer 5 minutes. Remove from heat.
  5. Add apples. Stir.
  6. Roll pastry to fit 9 inch pie plate. Spoon in filling. Dampen outside edge. Top with more pastry. Trim and crimp edges. Cut slits in top.
  7. You can sprinkle 1/4 tsp sugar top of crust. Bake in 350 degrees F oven for about 40 to 45 minutes or until browned.
  8. Makes 1 pie

I made some today~ it tastes like mincemeat~but fresh grated & baked~yummy~


I can tell this one is a winner. I have a recipe for green tomato mincemeat and it is the best darn substitute for the expensive stuff in a jar. However, this recipe doesn't require green tomatoes, which are a little hard to find most months of the year! I will try this. Thanks!
