Sweet  Sour Meat Balls Recipe
A vegetarian twist for those of you craving meatballs.

Ingredients
  • 1/4 cup vegetable oil
  • 1/4 cup white vinegar
  • 1 cup apricot jam
  • 1 cup ketchup
  • 1/4 onion, shredded
  • 1 tsp salt
  • 1 tsp dried oregano
  • hot pepper sauce, to taste
  • 4 eggs, beaten
  • 1 cup Cheddar Cheese, grated
  • 1/2 cup onion, minced
  • 1 cup pecans or walnuts, chopped
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp dried sage
  • 2 cups flavored bread crumbs

Directions
  1. Preheat oven to 350 degrees.
  2. Combine all sauce (first 8 items) ingredients and stir well.
  3. In a large bowl, combine all meatball (rest of items) ingredients. Form 2 inch balls.
  4. Place them in a 9 x 13 baking dish and cover with sauce.
  5. Bake for 35-40 minutes.

We got this recipe out of a cookbook (I believe the Moosewood Cookbook by Molly Katzan) about 7 years ago and altered it slightly. I highly recommend lots of hot pepper sauce and serving over a whole grain rice.

Alterations


For extra trashiness (the good kind) you could substitute Grape Jelly for the Apricot Jam. I'd also add a quarter cup of Grated Parmesan of Pecorino Romano, maybe some finely chopped raisins.

Great recipe as is though.
