How to make it

  • Combine water, mint, butter, salt and sugar in a medium sauce pot.
  • Bring mixture to a boil and reduce to a simmer for 2 minutes.
  • Bring mixture back to a boil then add peas and cover the pan.
  • Reduce heat to medium low and simmer peas 5 minutes and remove mint sprigs.
  • Place peas in a warm bowl and stir in the peppercorns and fresh mint.
  • Season with sea salt and serve immediately.
