Mexican Bake

- 1 can black beans (drained) shopping list
- 1 can Mexican corn (drained) shopping list
- 1 can diced tomatoes with green chilies shopping list
- 1 box corn bread mix shopping list
- 1 egg shopping list
- 1/3 c milk shopping list
- ½ jar roasted red peppers (or about 1/2 of a roasted red pepper) shopping list
How to make it
- Mix beans, corn and tomatoes. Pour into a 8X8 pan.
- Mix cornbread mix, egg and milk together and pour over bean mixture.
- Tear roasted red peppers apart and lay on top of cornbread mixture.
- Bake at 425 for about 30 minutes or until cornbread is baked through.
- Serve hot.
