How to make it

  • Mix beans, corn and tomatoes. Pour into a 8X8 pan.
  • Mix cornbread mix, egg and milk together and pour over bean mixture.
  • Tear roasted red peppers apart and lay on top of cornbread mixture.
  • Bake at 425 for about 30 minutes or until cornbread is baked through.
  • Serve hot.
