SWEET-N-SOUR SAUSAGE STIR-FRY

- ngredients: shopping list
- 1 package ( 14 oz ) reduced-fat smoked turkey kielbasa, cut into ½ -inch slices shopping list
- 2 small onions, quartered and separated shopping list
- 1 cup shredded carrots shopping list
- 1 can ( 8 oz ) un-sweetened pineapple chunks shopping list
- 1 Tbs. cornstarch shopping list
- ½ to 1 tsp. ground ginger shopping list
- 6 Tbs. water shopping list
- 2 Tbs. reduced-sodium soy sauce shopping list
- Hot cooked rice, optional shopping list
How to make it
- In a large skillet, stir-fry sausage for 3 – 4 minutes or until lightly browned. Add onions and carrots; stir-fry until crisp-tender. Drain pineapple, reserving juice. Add pineapple to sausage mixture.
- In a small bowl, combine cornstarch and ginger. Stir in the water, soy sauce and reserved pineapple juice until smooth. Add to the skillet. Bring to a boil; cook and stir for 1 – 2 minutes or until thickened. Serve over rice if desired. Yield: 4 servings.
