Beef And Vegetable Soup Recipe
This soup is so easy and I grew up eating soup in hot weather. My father always made this whenever he had to feed alot of people. It gets better the longer it simmers and it's a perfect meal with some dinner rolls and good friends to share it with.

Ingredients
  • 2-3 pounds beef roast (Add more if you want a beefier soup)
  • 1 tbsp Worcestershire sauce
  • salt and pepper
  • Olive oil
  • 1 14 ounce bag frozen green beans
  • 1 14 ounce bag frozen whole kernel corn
  • 1 14 ounce bag frozen sweet peas
  • 1/2 head green cabbage
  • 1 can kidney beans, drained
  • 2 cans chopped tomatoes with liquid
  • 2 yellow onions, quartered and sliced
  • 3-4 tbsp tomato paste
  • 2 tsp sugar
  • 1 can tomato juice
  • 3-4 bay leaves
  • hot sauce to taste (optional)

Directions
  1. Cut beef roast into cubes and put into a mixing bowl.
  2. Add worcestershire sauce to beef cubes. Sprinkle salt and pepper on beef.
  3. Heat frying pan and add olive oil. Brown beef on all sides and remove to soup pot.
  4. Add tomato juice, frozen veggies, beans, tomatoes, onions, cabbage, sugar and bay leaves. Stir in tomato paste.
  5. Bring to a boil then put on a medium heat for 1 1/2 to 2 hours. A couple of minutes before serving add sweet peas to soup and cook until hot.
  6. I add a couple dashes of hot sauce to spice it up a little. That's optional.Serve hot with rolls.
