carrot and butterbean soup

- 4-5 carrots peeled and diced shopping list
- 1 onion diced shopping list
- 2 cloves of garlic finely chopped shopping list
- 2 medium potatoes peeled and diced shopping list
- 500ml veg stock shopping list
- fresh ground pepper shopping list
- 2 tbsp tomato puree shopping list
- 200g tin of butterbeans shopping list
- 2 tbsp veg oil shopping list
How to make it
- gently fry the onions and garlic until soft
- add the stock and vegatables ( not the butterbeans) to the onions and simmer for 15 mins or until the potatoes are cooked through
- allow the soup to cool a little and blend
- pour back into the pan and add the beans and tomato puree and pepper
- reheat the soup
- adding more stock or water until your desired thickness
