roast beef salad

- leftover potroast or canned roast beef chunks shopping list
- onion to taste shopping list
- celery to taste shopping list
- salad oil shopping list
- mayonnaise to taste shopping list
How to make it
- cut leftover roast in half across the grain and cut up or break up chunks of the canned beef.
- rinse off any gravy. scrape off jellied juices for use somewhere else
- chop celery and onion and add to cut up beef
- stir together with mayonnaise. use a tbsp. or 2 of oil if you want to cut mayo use and keep the salad moist.
- serve on a lettuce leaf for an easy brunch dish or make sandwiches.
