How to make it

  • Cut the squash into 4 equal parts and scoop out the seeds
  • Place the squash skin side up in a baking dish with enough water to come 1/4 inch up the sides of the squash
  • Bake for 1 hour at 375
  • Scoop out squash and throw peel away.
  • Saute onion, celery for 5 minutes in butter then add bacon, squash, broth and cook about 10 minutes
  • Take out 1/2 of the mixture from the pot and put into blender to smooth
  • Return smooth mixture to the pot and add all the rest of the ingredients
  • Simmer 30 minutes and adjust thickness by adding more broth or water
