Butternut Squash Bisque

- A large butternut squash 4 or 5 lbs shopping list
- 4 slices of bacon cooked and crumbled shopping list
- 3 tablespoons of dried sage crumbled shopping list
- 2 tablespoons of fresh parsley shopping list
- 3-4 cups of chicken broth shopping list
- 1 pint of heavy whipping cream shopping list
- 1 small onion shopping list
- 2 stalks of celery shopping list
- 1 or 2 tablespoons of butter shopping list
- salt and pepper to taste shopping list
How to make it
- Cut the squash into 4 equal parts and scoop out the seeds
- Place the squash skin side up in a baking dish with enough water to come 1/4 inch up the sides of the squash
- Bake for 1 hour at 375
- Scoop out squash and throw peel away.
- Saute onion, celery for 5 minutes in butter then add bacon, squash, broth and cook about 10 minutes
- Take out 1/2 of the mixture from the pot and put into blender to smooth
- Return smooth mixture to the pot and add all the rest of the ingredients
- Simmer 30 minutes and adjust thickness by adding more broth or water
