How to make it

  • Skinned pineapple and slice to 1cm thick.
  • Blend shallots, garlic and ginger into paste.
  • Heat oil in a wok and saute the shallot, garlic and ginger paste until fragrant.
  • Add chili paste and stir again until its fully cooked* (about 10-15 minutes, keep stirring )
  • Add some salt.
  • When chilli is cooked add half cup water, stir well and add pineapple.Cook under cover for 5 minutes.
  • Uncover and stir until well mixed. Now add all the remaining ingredients.
  • Add another half cup water and cover again and leave for another 5 minutes.
  • Uncover and stir everything until well mixed.
  • Taste and add sugar/salt if necessary.

  • Ready to serve!
