How to make it

  • In a large skillet, add olive oil, garlic, and onions and cook for 1-2 minutes on medium heat. The onions do not need to become brown or translucent.
  • Add the pepper and cook for another 2 minutes on medium heat.
  • Add the vegetable broth and stir once or twice to mix.
  • Add the black beans and stir once or twice to mix.
  • Add the tomato sauce and stir once or twice to mix.
  • Add the salsa and stir once or twice to mix.
  • Add the taco seasoning and stir once or twice to mix.
  • Let cook for 5-7minutes stirring occasionally to mix.
  • (Optional) Add the chopped carrot and stir to mix.
  • (Optional) Add the chopped sweet potato and stir to mix.
  • Let cook for another 5 -7 minutes stirring occasionally to mix.
  • Lower heat from medium to medium-low. Keep the dish at a simmer.
  • Begin to mash ingredients together. This can take some time before everything is the desired thickness. You want this dish to thicken and not be runny, it will with time. Be patient and mash often. (Apx 15-20 minutes)
  • Add the corn
  • (Optional) Add the spinach
  • Continue to mash and stir for the remaining 4-5 minutes.
