Black Bean Vegetarian Tacos

- 1 15oz can black beans -rinsed well and drained shopping list
- 1 14.5 oz veggie broth shopping list
- 1/2 cup salsa shopping list
- 1 cup frozen corn shopping list
- 1/2 cup tomato sauce shopping list
- 1 medium onion- chopped into small pieces shopping list
- 1 small red pepper -chopped into small pieces shopping list
- 4 cloves chopped garlic shopping list
- 1/2 packet low sodium taco seasoning (or make your own blend of cumin, paprika, and cayenne) shopping list
- 1 tblspn olive oil shopping list
- Optional: shopping list
- 1 med sweet potato- peeled and cut into small 1/2" pieces shopping list
- 1 cup frozen spinach shopping list
- 1 large carrot - peelied and cut into small 1/2" pieces shopping list
- Serve: shopping list

How to make it
- In a large skillet, add olive oil, garlic, and onions and cook for 1-2 minutes on medium heat. The onions do not need to become brown or translucent.
- Add the pepper and cook for another 2 minutes on medium heat.
- Add the vegetable broth and stir once or twice to mix.
- Add the black beans and stir once or twice to mix.
- Add the tomato sauce and stir once or twice to mix.
- Add the salsa and stir once or twice to mix.
- Add the taco seasoning and stir once or twice to mix.
- Let cook for 5-7minutes stirring occasionally to mix.
- (Optional) Add the chopped carrot and stir to mix.
- (Optional) Add the chopped sweet potato and stir to mix.
- Let cook for another 5 -7 minutes stirring occasionally to mix.
- Lower heat from medium to medium-low. Keep the dish at a simmer.
- Begin to mash ingredients together. This can take some time before everything is the desired thickness. You want this dish to thicken and not be runny, it will with time. Be patient and mash often. (Apx 15-20 minutes)
- Add the corn
- (Optional) Add the spinach
- Continue to mash and stir for the remaining 4-5 minutes.
