Plum Pear Pepper Ketchup

- 2 pounds ripe plums, halved and pitted shopping list
- 5 ripe Anjou or bartlett pears (about 2 1/2 pounds), peeled and coarsely chopped shopping list
- 1 cup golden raisins shopping list
- 2 yellow wax hot chiles, seeds and stems, removed, chopped shopping list
- 1 habanero chile, seeds and stem removed, chopped shopping list
- 1/2 cup water shopping list
- 1 1/4 cups sugar shopping list
- 20 whole cloves shopping list
- 3 (2 1/2-inch) sticks cinnamon shopping list
- 3/4 tsp ground coriander shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp ground white pepper shopping list
- 1/4 cup cider vinegar shopping list
- 1/4 cup water shopping list
How to make it
- In a large pot, combine the plums, pears, raisins, and chiles with 1/2 cup water and heat to boiling. Reduce the heat and simmer, covered, until the fruit is soft, about 20 minutes.
- Mash the fruit and chiles with the back of a spoon, and add the sugar, cloves, cinnamon, coriander, salt and pepper. Stir well and simmer, uncovered, stirring frequently, until very thick, about 50 minutes. Remove the cinnamon sticks and reserve.
- Remove from the heat and transfer to a food processor. Puree until smooth. Strain if you wish for a smoother ketchup. Transfer to a mixing bowl and stir in the cider vinegar and water (as needed for consistency). Pour the ketchup into pint jars and add a cinnamon stick to each jar. The ketchup will keep in the refrigerator for 3 months.
