How to make it

  • In a large pot, combine the plums, pears, raisins, and chiles with 1/2 cup water and heat to boiling. Reduce the heat and simmer, covered, until the fruit is soft, about 20 minutes.
  • Mash the fruit and chiles with the back of a spoon, and add the sugar, cloves, cinnamon, coriander, salt and pepper. Stir well and simmer, uncovered, stirring frequently, until very thick, about 50 minutes. Remove the cinnamon sticks and reserve.
  • Remove from the heat and transfer to a food processor. Puree until smooth. Strain if you wish for a smoother ketchup. Transfer to a mixing bowl and stir in the cider vinegar and water (as needed for consistency). Pour the ketchup into pint jars and add a cinnamon stick to each jar. The ketchup will keep in the refrigerator for 3 months.
