How to make it

  • Peel potatoes, cut into wedges shape slices. Soak in water for 5 mins.
  • Rinse anchovies and strain.
  • Cut onions into rings and chop green chilli.
  • Blend onions with garlic.
  • Heat about 2 cups of oil. Fry sliced potato until cooked.
  • Remove all but 4-5 tbsp of the oil and fry anchovies until brown and crisp. Set aside.
  • Remove anchovies and use remaining oil to fry onion and garlic until fragrant.
  • Add chili paste stir again until cooked (about 10 mins) then add the onions and green chili.
  • Stir until well mixed then add half a cup of water.
  • Allow it to thicken.
  • Add all the fried potato and achovies and mix well.
  • Wait a little, then add a little salt and sugar.
  • Cook for another 3-5 minutes until cooked.
  • Serve with rice or bread.
