Spicy Spud Slices

- 10 potatoes shopping list
- 50g dried anchovies shopping list
- 3 shallots shopping list
- 3 cloves garlic shopping list
- 5-6 tablespoons chilli paste shopping list
- ( pls refer to recipes somewhere in this page) shopping list
- 1 onion shopping list
- 2 green chilies shopping list
- 2 cups of oil to fry shopping list
- Half cup water shopping list
- salt and sugar shopping list
How to make it
- Peel potatoes, cut into wedges shape slices. Soak in water for 5 mins.
- Rinse anchovies and strain.
- Cut onions into rings and chop green chilli.
- Blend onions with garlic.
- Heat about 2 cups of oil. Fry sliced potato until cooked.
- Remove all but 4-5 tbsp of the oil and fry anchovies until brown and crisp. Set aside.
- Remove anchovies and use remaining oil to fry onion and garlic until fragrant.
- Add chili paste stir again until cooked (about 10 mins) then add the onions and green chili.
- Stir until well mixed then add half a cup of water.
- Allow it to thicken.
- Add all the fried potato and achovies and mix well.
- Wait a little, then add a little salt and sugar.
- Cook for another 3-5 minutes until cooked.
- Serve with rice or bread.
