Spaghetti Squash Egg Salad

- 1 large spaghetti sqaush shopping list
- 3 - 4 large eggs hard boiled shopping list
- 1 Tbs sweet chopped onion or to taste shopping list
- 2 Tbs chopped celery or to taste shopping list
- 2 Tbs chopped fresh parsley or to taste shopping list
- Mayonaisse to bind or Veganaisse shopping list
- salt and pepper to taste- or Spike seasoning shopping list
- 6 low carb wraps ( we use tomato basil , spinach or plain ), low carbs wraps are not as large as the regular sized wraps shopping list
How to make it
- Cook the squsah by your favorite method
- Remove seeds, scrape off the strands of the squash and place in colander to drain off any moisture and cool completely
- When room temp, combine with the eggs, celery, onions, and parsley
- Add mayo to bind
- Season to taste, I like the salt free Spike herb seasoning
- Use to make wraps or chill till serving time
- Spread on wraps with lettuce, thin sliced tomatoes, or whatever you like
- Serve immediately
