How to make it

  • Cook the squsah by your favorite method
  • Remove seeds, scrape off the strands of the squash and place in colander to drain off any moisture and cool completely
  • When room temp, combine with the eggs, celery, onions, and parsley
  • Add mayo to bind
  • Season to taste, I like the salt free Spike herb seasoning
  • Use to make wraps or chill till serving time
  • Spread on wraps with lettuce, thin sliced tomatoes, or whatever you like
  • Serve immediately
