HONEY LIMA SALMON WITH SPINACH

- 1 tbsp canola oil shopping list
- 1 tbsp soy sauce shopping list
- 2 tsp honey shopping list
- 2 tsp whole grain mustard shopping list
- Zest & juice of 1 lemon shopping list
- 4 skinless salmon fillets shopping list
- 2 298 ml cans of lima beans; drained and rinsed shopping list
- 1 garlic clove crushed shopping list
- 2 tbsp olive oil shopping list
- pinch crushed chili flakes shopping list
- 7 oz baby spinach; rinsed shopping list
- 12 cherry tomatoes shopping list
How to make it
- In a dish, mix canola, soy sauce,honey, mustard and 1 tbsp lemon juice.
- Add salmon and turn to coat.
- Put lima beans and garlic in pan with olive oil, remaining lemon juice, zest and chili flakes.
- Set aside.
- Tip damp spinach into dry frying pan and stir over low heat until wilted
- Drain and set aside
- Gently hear beans.
- Heat frying pan until hot.
- Cook salmon on both sides until just firm and pink.
- Add tomatoes at the last moment.
- Roughly crush beans with fork and stir in spinach and seasoning.
- Divide among 4 plates.
- Serve immediately.
