Stuffed zucchini

- 1 very large zucchini shopping list
- olive oil shopping list
- 3/4 cup brown rice shopping list
- 1 tbspn butter shopping list
- 3 cloves garlic, to taste shopping list
- 1/2 tspn hot chilli powder, to taste shopping list
- 1 cup small mushrooms, chopped shopping list
- 1 onion, diced finely shopping list
- 1 grated, carrot shopping list
- 1 red capsicum, diced shopping list
- Danish feta cheese shopping list
- 4 spinach leaves, stalk removed shopping list
- 1/2 cup cherry tomatoes shopping list
- salt and pepper shopping list
- grated parmesan cheese shopping list
How to make it
- Slice zucchini in half lengthwise and scoop out the middle so you have made a boat about 1cm thick. Keep what you've scooped out and chop it finely (it goes with the other veges).
- Put the zucchini in the oven at about 180C for half an hour.
- Whilst the zucchini is in the oven, cook the rice.
- And while the rice is cooking, put butter into a pan and cook the onion till a bit soft and add all the other ingredients except the spinach. Cook for about 10 minutes. Keep stirring if you need to stop it sticking.
- When the rice is cooked, mix it up in the pan with the veges. Cut up the spinach leaves and mix them through. Put the chopped up feta in with the mix
- Take the zucchini out of the oven and spoon in the rice & vege mix.
- Cover with grated parmesan cheese and put it back in the oven for 5 or ten minutes.
- It's really yum.
