How to make it

  • Preheat oven to 350 Degrees Fahrenheit.
  • Thaw Morningstar Farms chik'n strips (I put it in a large saute pan and heated it up--just don't let it get overdone).
  • Allow strips to cool until you can handle it and chop into bite-size pieces; set aside.
  • Coat 2.5 qt round or oblong or square casserole with pan spray and set aside.
  • Thaw veggies in microwave on 1/2 power but do not cook!
  • Mix soup, 3/4 cup sour cream. Fold in thawed veggies, cheese and chopped chik'n in large bowl. Place in prepared casserole dish.
  • In medium size bowl stir 1/4 cup sour cream, 3 T milk, and 1 cup light baking mix.
  • Drop baking mix into biscuit-size portions on top of chik'n veggie casserole.
  • Bake for 35-40 minutes until casserole is bubbly and biscuits on top are lightly browned.
  • Enjoy!
