How to make it

  • Combine all the meatball ingredients
  • Roll into small balls (1 inch diameter)
  • place balls on baking sheet and put in the refrigerator for at least 1 hour.
  • Saute all onions and carrots and celery in a soup pan for 5-6 mins or until soft
  • Add the chicken broth and wine and bring to a boil
  • Add the pasta to the simmering broth and cook for 6 to 8 minutes, until the pasta is tender.
  • Add the fresh dill and then the meatballs to the soup and simmer for 1 minute.
  • Stir in the fresh spinach and cook for 1 minute, until the spinach is just wilted
  • Ladle into bowls
  • Add Parmesean for taste
