How to make it

  • Peel and slice eggplant into thin slices
  • Whisk egg with water or milk (I use almond milk)
  • Combine rice flour, flax, salt and any desired seasonings
  • Dip eggplant slices in egg and then coat with flax mixture
  • Roast in oven at 450 for 15 minutes
  • Use noodles in your favorite lasagna or layered casserole recipe
